Ingredients:
- 4 to 6 Chicken Breasts
- 3 Cloves Garlic, minced
- 1 Medium Onion, chopped
- 1/2 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Cinnamon
- 2 tsp Chili Powder
- 1 tsp Cayenne Pepper
- 1 tbsp Lemon Juice
- 1/4 cup Tomato Paste
- 1 cup Diced Tomatoes
- 1 cup Coconut Milk
Method:
- Heat the olive oil in a pan and begin caramelizing the onions.
- Add minced garlic to the onions and continue caramelizing until golden and fragrant.
- Mix in the coconut milk, olive oil, lemon juice, and spices — salt, black pepper, cinnamon, chili powder, cayenne pepper, cilantro, paprika, and cumin, along with the diced tomatoes, and tomato paste. Bring the mixture to a simmer.
- Place the chicken breasts in the slow cooker and pour the spicy coconut cream sauce over them.
- Cook on low for approximately 4 hours, or on high for about 2 hours, or until the chicken is thoroughly cooked.
- After cooking, shred or slice the chicken into smaller pieces.
- Serve the chicken hot, drenched in the spicy coconut cream sauce, over a bed of cauliflower rice for a complete Paleo meal.
